Ingredients:

  • 1 can (14 oz) of full-fat coconut milk
  • 1 cup of coconut cream (or another can of coconut milk if cream isn't available)
  • 1/3 cup of maple syrup or agave nectar (adjust to taste)
  • 2 teaspoons of agar agar powder (for setting; you can substitute gelatin for a non-vegan version, adjusting the amount)
  • 1 teaspoon of vanilla extract
  • Pinch of salt

Optional for serving:

  • Fresh berries or stewed cherries
  • Mint leaves for garnish

Instructions:

1. Prepare the Molds:

Lightly oil 4 ramekins or small glasses with a neutral oil. Alternatively, use silicone molds for easier removal.

2. Combine Ingredients:

In a saucepan, mix the coconut milk and coconut cream. If using coconut cream from a can, scoop the solid part and mix it with the milk until smooth.

3. Heat and Dissolve:

Add the agar agar powder to the coconut mixture. Whisk thoroughly to ensure there are no lumps. Heat the mixture over medium heat, stirring constantly until it begins to simmer. Let it simmer for 1-2 minutes to activate the agar agar.

4. Sweeten and Flavor:

Remove the saucepan from heat. Stir in the maple syrup, vanilla extract, and a pinch of salt. Taste and adjust the sweetness if needed.

5. Set the Panna Cotta:

Pour the mixture into the prepared molds. Let it cool to room temperature before transferring to the refrigerator. Chill for at least 2 hours or overnight for a firmer set.

6. Serve:

To unmold, briefly dip the bottom of each mold in hot water, run a knife around the edge, and invert onto a plate. Alternatively, serve directly from glasses if used.

Top with fresh berries, stewed cherries, or your favorite fruit. Garnish with mint leaves for an extra touch.

Notes:

Agar agar is a seaweed-based alternative to gelatin, making this dessert completely vegan. Remember, it sets at room temperature but needs to be boiled to activate.

If the texture is too firm, reduce the amount of agar agar slightly. If it doesn’t set well, increase it incrementally.
