- 1 cup quinoa
- 2 cups water
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 small red onion, chopped
- 1 cup cherry tomatoes, halved
- 1 cup chopped carrots
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- Salt and pepper, to taste
For the vinaigrette dressing:
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 garlic clove, minced

Instructions:
1. Rinse the quinoa in a fine-mesh strainer under cold running water for at least 30 seconds.
2. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover and simmer until the quinoa is tender and the water has been absorbed, about 15-20 minutes.
3. Remove from heat and fluff the quinoa with a fork. Let cool for 10 minutes.
4. In a large bowl, combine the cooled quinoa, chopped bell peppers, onion, cherry tomatoes, carrots, parsley, and cilantro.
5. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, garlic, salt, and pepper.
6. Pour the vinaigrette over the quinoa mixture and toss to combine.
7. Serve chilled or at room temperature.
